Cauli-Fredo
Creamy Alfredo-inspired sauce!
My weeknight frenzy tip:
When you make this sauce - double it and freeze some. Then when you're stuck on what to have for dinner, defrost the sauce, heat it and toss it over some ravioli or other pasta!
Watchu Need:
1 medium-sized head of cauliflower (approx 4-5cups)
4 cloves garlic (crushed)
2 tsp olive oil
1 bunch of spinach (roughly chopped)
2 cups plain milk (I used Silk Next milk)
chilli flakes (optional)
2 tsp dry oregano
1 cup nutritional yeast
1/2 tsp nutmeg
Let's Get Into It:
- Heat oven to 400F
- In a bowl, toss cauliflower and garlic with olive oil, s&p, chilli flakes (to your liking), dry oregano
- Place on a lined baking tray and roast till knife tender. approx 20-25mins.
- Place milk, nutmeg, nutritional yeast and cooked cauliflower and puree till smooth.
- Pour mixture into a pot - bring to a boil and reduce to simmer. Let simmer for 5 mins then fold in the spinach and tun off the heat.
- Taste and adjust seasoning.
